A flash of inspiration that worked out surprisingly well. Fivegeeks recipes fans will spot that this is a combination of my Parameterised Chilli spices with Mark's Meat Loaf and pizza sauce.
Serves four.
Chilli Meatballs
- 4 slices of brown bread
- 2 onions
- 2 green chilli peppers
- 40g (half a large bunch) fresh coriander
- 4 cloves garlic, crushed
- 3tsp dried oregano
- 3tsp ground cumin
- 1tsp ground coriander
- 4tsp paprika
- 3tsp cayenne pepper
- Lots of ground black pepper
- 1kg beef mince
- 2 beef stock cubes
- 2 eggs
You'll need a large mixing bowl, a food processor and a fairly large baking tray. Preheat your oven to 175°C.
Reduce the bread to crumbs in the food processor, and put the crumbs in the bowl. Halve the onions, top-and-tail the chilli peppers, and de-stalk the coriander; put the onions, peppers and coriander in the food process and chop to a rough paste. Add to the bowl along with all the remaining ingredients.
Mix the contents of the bowl together thoroughly using your hands. Shape into golfball-sized meatballs (they don't need rolling in anything) and place on the baking tray. Cook in the oven for about 45 minutes.
Serve with rice, grated cheese, and tomato sauce (below).
Three Tomato Sauce
You may want to double this recipe if you're serving four people. It'll work as a pizza sauce too.
- 1 tin chopped tomatoes
- 100g (half a tube) tomato puree
- 50g (half a packet) sun-dried tomatoes, finely chopped
- Black pepper
Put all of the above in a small saucepan, and simmer until the sauce has reduced a bit and the dried tomatoes have absorbed some of the liquid. Pour over meatballs.
