For the most effective transfer for heat to pans without perfectly flat bottoms, hobs should be topped with a layer of some material that is flexible but still conducts heat very well. (A pool of mercury would be impractical for obvious reasons, but perhaps some alloy that is liquid between ten and a couple of hundred degrees Celsius trapped inside a heatproof fabric...)
